A First

There is a confession I must make: I have never made a chocolate cookie before. I know, it's almost sinful. Everyone who knows me knows I'm a chocoholic. So while I was staring at the search bar on the home page of allrecipes.com, I decided it was time to type in "chocolate cookie". Randomly, I chose a high-rated recipe, and Noel and I immediately began whipping up a batch.
These cookies came out so freaking delicious! My father-in-law and hubby loved them, and they can be a tough crowd at times considering they aren't big on desserts. The texture was a cross between brownie, cake and cookie. Incredible. One batch makes 3 dozen cookies when you use a 1.5 TBS scooper (given none of the cookie dough is eaten, which is a challenge for me). Here is the recipe so you and your family can indulge in this quick and easy recipe. And chances are, you probably already have the ingredients :)



Ingredients
  • 1 cup butter or margarine, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla extract (I use vanilla bean paste)
  • 2 cups all-purpose flour
  • 2/3 cup baking cocoa
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1 cup white chocolate chips (yum!)
In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture. Cover and refrigerate for 1 hour or until easy to handle. Using 1.5 TBS sized cookie scoop, place 2 inches apart on ungreased baking sheets. Bake at 350 degrees  for 10-12 minutes or until the edges are firm. Remove to wire racks. Enjoy <3
